How would I go about setting up a scheduled reboot of my server once a week at midnight - just to clear some memory issues and stuff like that.

You'd be ahead of the game by figuring out what is cousing the memory issues in the server.

I'd read man reboot try the reboot command. If it odes what you want, tie it to the cron process for scheduling.
