Is there a way in OSX to have fonts display in the menu the way the font actually looks. I remember back in OS9 that most of my apps showed the fonts in the menu the way they really looked.

Not in all apps. Stone just released FontSight, a plug-in for any Cocoa application but Carbon applications have to have such a menu placed into it by whoever writes the application.
