I installed X-Chat! Launching by typing xchat in the xterm works, but when I want to add the command xchat to the Application list menu, it down't work! Any ideas?

Put the whole path in as the command.

Yes, if you've installed XChat using Fink you need to put /sw/bin/xchat in the command column instead of just xchat. /sw/bin/init.sh isn't parsed when running applications from the Application menu so /sw/bin is not in your path.
