All the kernel panics I get are caused by SMB and sometimes other file share protocols in the Finder such as FTP and AFP but not as much as SMB.
This problem did only get worse with every OS X update while every OS X update description included "better networking/smb etc.."
Do you have the same problems?

I use SMB to connect to our Windows servers day in and day out (both NT 4.0 & 2k) and I really don't have too many problems with it. No KP's to speak of...just some general weirdness on occasion, but nothing too terrible.

Same here.
Wish OS X didn't leave visible .DS Store files behind.

I have had kernel panics with corrupted directories on our Windows 2k server via AFP. After running chkdsk on the 2k server and fixing the corrupted dirs all was fine on OS X. It was reproducible on every OS X 10.2 Mac when accessing that single directory before fixing it with checkdisk. Possibly you have a similar circumstance.

The .DS_Store files drive me insane. Does anyone know of a way to keep them from being created?

I have always had problems connecting with smb to pc's on my school's network that asked for passwords or did anything else except mount on the desktop. I chose not to update to X.2.5 b/c even though it said it fixes stuff so has every other update and they never did (I would have updated anyway but everything else was working and the last time I updated for the hell of it everything became unstable until I did that combo update), so now I may go to X.2.6 but I haven't heard of any real improvements and my system is working the way I want it to now.

well sorta.... the finder creates the .DS_store files, so if you use the terminal then they are not created. But I bet this is not the solution you are after.
I logged feedback about this ages ago, it seems that more "votes" are needed to "add" the no . files on windows network volumes feature
