Can you turn on PHP with the gui? Or will I have to get into the terminal?

If you did a search on VersionTracker, you might find a thing called PHPInstall...

...but really, if you're going to be scripting PHP, it's shouldn't be that big a deal to install and configure it with the terminal

There is even a tutorial for installing and configuring PHP on Mac OS X written by Apple itself:
