I'm having to copy a lot of files, and overwrite a lot of files, and I'd like to be able to do so without having to constantly approve the copies? Does anyone know how to do this?

I dont' want the dialog to come up at all.

Well, apart from the obvious "check the checkbox that says to do this for all files and grit your teeth through the first dialog box of each type", I'm not sure what to tell you. You could use CpMac or ditto from the Terminal, but that might do odd things to permissions...
