Is it possible to uninstall software updates (and reinstall them later if needed) on Mac OS X? My Kensington PocketMouse Pro Wireless stopped working after a recent software update a few days ago. So I'd like to uninstall the upadate, or better yet, fix the mouse problem without the uninstall if anyone on the forum would be kind enough to advise me. Thanks in advance!

No, you cannot uninstall a software update, as it overwrites the original files. To downgrade (i.e. from say 10.2.6 to 10.2.5, you will need to reinstall the whole operating system).

One thing you can try is go to the Kensington website and check for updated drivers for your wireless mouse (especially if you used the installation CD when you originally got the computer). Download and install the new drivers and see if that helps.
