Control-O is for a plain save. (WriteOut on the screen)
Control-X is for exit, which gives you the option to save.

If you look at the list at the bottom of the screen it gives you all the options...

One further useful bit of information: If in some moment of insanity, you think that ctrl-s might save, you will need to type ctrl-q to resume your terminal.

what is then control-s? command mode or something?

If you look in the pico help, neither ctrl-s nor ctrl-q does anything. Also, typing them in pico merely prints a message "Unknown Command: ^S".

Tried in tcsh/bash (from ssh, not Terminal.app) in Mac OS X.2 AND Redhat Linux 9 using pico 2.4 (Mac OS X) and 4.2 (Linux).

Ctrl+s is conventionally "suspend terminal".

But there are a LOT of places where that does not occur: Pico, emacs and vi are some examples. You also cannot ctrl-c to abort pico, vi or emacs.

I can't speak for OSX, but IME, ctrl-s suspends pico under Solaris and some versions of Linux.

Well, this is an OS X forum so that would be the target platform. Also, as I said, RedHat does not do this (and I haven't experienced this behavior under any Linux for some time).

It was a response very much couched in terms of my experience. Look on it as a useful piece of information to bear in mind if xterms stop working in future.

It really depends on the version of pico you
are using. I used to have the same problem
with vi but that was on Solaris ages ago.
