Have just transferred a work machine to a new user running 10.2. The 'open with' settings were set to open .eps files with illustrator, no matter what application they had been created with.

Is there a way to change the 'open with' settings back to its default for all existing files, ie: it opens an .eps with whatever application made it?

I'm not 100%, but I think you can only set 1 default opener for each file type...
Select the .eps file, hit Cmd-i (or File>Get Info), in Open With select the app you want, and click "Change All"
Otherwise just to open 1 file with a different app, Ctrl-Click the file and Open With.
