Stop a process within an application? Now that would be a useful feature!!!!!
Is there anyway of doing this now? UNIX?

I don't know if it is possible but you probably could stop one of the thread process.
Most apps are badly threaded so it probably will be a better idea if you force-quit the app and then relaunch. Most app launch very fast in OS X so..

a useful process to kill would be whatever happens when a connected server drops out - is it in the finder or somewhere else?

or when safari hangs on an apple webpage, which 30 seconds ago it did for me

Command Period seems to be an OS9 thing.

Well, command-period stops a process running in Terminal, so it isn't entirely an OS 9 thing.
