I have a copy of my hard drive that I made with CCC.

Questions

1- Can I take the Application folder only and replace it in my other machine
and have the applications functional? And how would I do that (target disk mode)?

2- What would be the best way to copy the applications from one machine to
another without installing them one at a time on the new machine?

No. The apps would move without a problem, but their preferences and application support files need to be moved also.

If you want a quick and easy, move the applications and ~/Library folders. Depending on what you have installed, you may also have some custom data in /Library.
