We don't have any /dev/dsp so what do we use for things like darkice.sourceforge.net ?

I don't think the changes of getting something like darkice ported without a fairly serious effort are very good. You may want to consider some of the Mac OS X native streaming servers, such as:
  • http://www.arcticsw.com/istream/
  • http://macosx.forked.net/showcat.php?cat=Streaming&sortmethod=reverse
BTW Haven't tried any of these, just possible suggestions.
