So my screensaver is of movie previews, which is fine with trailers such as those for the Matrix and LOTR, but most sites don't offer a download option, and the 'save as QT movie' option is greyed out in the contextual menu... How do I save the movie to disk - it is evidently in cache somewhere, isn't it?

Two things -

1. System Preferences, QuickTime, PlugIn tab. Check that "Save movies in disk cache" is checked.

2. Get iCab. I find I can find played/downloaded movies stored there. I search for .mov and estimated file size and drag out of cache, adjust properties and voila.

Sometimes you need QT Pro.
