A couple of network related switch questions

I recently switched to a G5 from Windows and have a few networking questions.

First, my machine's hostname is mymachine.local. How do I configure my system so that the machine name is mymachine.mydomain.com?

Second, I have a local network and my internet traffic goes through a firewall (gateway) connected to my cable modem. I also connect occasionally to my customer's networks via dialup. On windows, my normal internet traffic is still routed through my cable connection even when I'm dialed into a customer. This doesn't happen on my Mac. Is there a way to do this?

Well, you can change the name in the Sharing pane of System Preferences. But what are you trying to do with this?
