I am in the middle of trying to install the Panther upgrade. After zeroing all data as suggested for a clean install, the upgrade disk said that it could not use my HD as a destination since there was now no prior version of OSX. Fine. So I figure I need to reinstall Jaguar, but how do I eject the Panther disk? Currently my PB is sitting there with a gray screen. In the center is a circle with a bar through it. Seems all locked up. Help...

Well restart the computer and then hold down the option screen. That will take you to a screen to select what disk to start from. After you see the mouse pointer, eject the CD from the drive, and insert the Jag CD. Click the refresh button (the one on the left) to rescan all drives. Once its done, select the Jag CD and click the continue button (on the right).
