K, this might sound stupid to you and, if it does, I urge you to not reply. But I'm new to the whole terminal thing and am finding it quite interesting.
SO, can anyone point me in the right direction to finding a list of useful commands, or perhaps list some off that you use often and what they do.
Basically I'm just wondering what the extent of it's usefulness is.

I can point you in the direction of the Unix forum here.

There is an old, long thread title "Common Unix Commands" that should show up in a search or on the first few pages.

If you have X11 installed, you might be interested in the man page reader installed by default. In X11, choose "xman" from the Applications menu.

It's still not brilliant, but some people find it easier than the terminal for learning about unix commands.

I believe there are also some native man page readers available, but I've never looked into them.

(BTW, "man" is the unix manuals command for reading the manuals on other commands).

thanks...and yeah, I actually wasn't making that leap from 'man' to manual...but it's all coming together now.

p.s. notice the much more helpful subject line?

There are two broad categories of commands you could look at: Mac OS X specific (more-or-less) and typical Unix utilities. Here's a link to a list of some useful (mostly Mac OS X specific) commands:
