If they sue Apple, I hopoe Apple will file a counter suit. I don't see much evedence to indicate others are going this route, but it may be the best way to battle this...
I'm sure if someone could stem up sufficent charges for a counter suit - and win - things could get ugly for SCO...

Looks like I spoke too soon. It appears RedHat is counter suing...

IBM and Red Hat are already engaged in countersuits with them. (Both are fairly large.)

This is interesting, though not a supprise I guess:
Though Microsoft has entered into a license agreement with Caldera/SCO "to respect SCO's intellectual property", the move is widely regarded as a way provide financially strapped Caldera/SCO with funds to survive prolonged litigation and to cast doubts over the legal status of its major challenger Linux.

HA HA, Check this out:
The first development followed another series of Denial of Service (DDoS) attacks on SCO, which took place two weeks ago. These were the second and third such attacks in four months and have prevented Web users from accessing our web site and doing business with SCO. There is no question about the affiliation of the attacker – Open Source leader Eric Raymond was quoted as saying that he was contacted by the perpetrator and that “he’s one of us.” To Mr Raymond’s partial credit, he asked the attacker to stop. However, he has yet to disclose the identity of the perpetrator so that justice can be done.
Hey, maybe he didn't release the guy's name because the guy's name is copywritten. He wouldn't want to get sued...
