How do I specify which program opens a specific file type.

Since I upgraded to panther, some programs no longer open file types correctly (ie vlc for avi's).
I've tried using the finder option to open a file with, and then specify always open with, but it seems to just work on a file by file basis.
What I'd like to do is say that all avi's be opened by VLC etc.

Get Info
Open With...
(select program)
Hit the "Change All..." button
|

How about changing the default open application? To skip the right click selection like a global setting for openning certain file types.
