I've never used a newsreader before, but I just installed pan. It's asking me for a news server. What should I use?

Also, I thought I was installing an app to read RSS feeds. I'm a bit confused.

I never heard of "pan", but it sounds like it's for accessing Usenet NNTP newsgroups (e.g. comp.software.macintosh or microsoft.public.mac.office) rather than an RSS. In which case your ISP may provide one (or use msnews.microsoft.com for a small selection of MS-oriented groups.)

If you want something to access RSS feeds, I recommend NetNewswire...

You'll need a NNTP server to use News, as has been said.

and if you really just want nntp, i recommend going through the web, using groups.google.com. i used to be a hardcore mt-newswatcher (and newswatcher before that) fan back in the day -- my first usenet post is in september 1996! -- but deja-news, which morphed into google groups, is the way to go imo.
