Why is the option even there to cap the fps to 30? Why wouldn't you just want it to go as fast as possible?

So it won't eat all your CPU (e.g. on a PowerMac G5 or a PowerBook, where running the CPU will result in more heat, thus causing the fans to turn on and make noise).

Also, a constant framerate sometimes looks better than a higher-but-varying one.

To summarize both answers: A constant framerate can look more fluid than a higher but fluctuating framerate. And as fast as possible not only does the fans go on, it also uses more battery power.

And to add my own: If you have an ultra fast machine, the visualization will degenerate to a big smear which doesn't look as interesting any more.

And the optical cortex maxes out at about 30 fps (persistance of vision etc)
