Yes, I am using Apple's X11

Everything else is working.
Could it be that Gnome can't find the new location of X11?

Some progress. I typed in the full path,
/sw/bin/gnome-session and got the splash screen. It crashed then I got this dialog:

there was an error starting the GNOME Settings Daemon.

Some things. such as themes, sounds, or background settings, may not work correctly.

The Settings Daemon restarted too many times.

The last error message was:

Failed to activate 'OAFIID: Gnome_SettingDaemon'

Gnome will still try to restart the Settings Daemon next time you log in.

did you install the correct package for your xfree86 install? if you used apple's x11 packages you need to install the system-xfree86 package in fink.

I did. I used Fink Commander and that was one of the dependencies.

I have cleared out everything, reinstalled Fink and will try again this week.
