Does anyone know how to deauthorize computers.. when you no longer have access to them?

From the knowledge base:

Remember to deauthorize your computer before you sell or give it away. To deauthorize a computer:
1. Open iTunes.
2. From the Advanced menu, choose Deauthorize Computer.
3. Select "Deauthorize Computer for Apple Account" and enter your Apple ID and password.

You missed the relevant bit.
To deauthorize a computer to which you no longer have access, contact iTunes Music Store Customer support using the Web form at the bottom of this page (you may need to scroll down to see the form): http://www.apple.com/support/itunes/authorization.html
