I just upgraded to Panther today. I tried the Find feature. Isn't it supposed to dynamically refine your search the more you type in? It did when I first tried it, but now it doesn't. I haven't deleted or added anything since.

Anyone know how I can fix this?

You could try relaunching the Finder, or just restart. This happened to me once and a restart fixed it.

Actually, I found out what I was doing wrong. I was invoking the Cmd-F command without any Finder windows open. This apparently does not trigger the fast search feature.

You have to do a search in an open Finder window in order to invoke the fast search feature (ie., using the search box at the upper right corner of the Finder window).
