how do i prevent apps from hijacking my screen?

i hate it when certain apps pop to the front when i don't want them to. like when i get a new message in ichat, or when i download something and stuffit expander automatically launches to decompress the file. (those are just a couple examples)

it's really annoying when i'm typing an email, and these things pop up in my face and take focus away from what i'm doing.

is there any way to prevent this? i thought Windows was annoying, but this is just INSANE.
