How to erase .plist of Finder using single user mode?

I have a friend that has a serious problem with his Finder. He restarts and gets everything working but the Finder will not launch. He does not have the Terminal in the Dock so he does not have access to it. What would be the command in single user mode to erase the Finder's .plist so it could re-generate a new one upon restart?

Command-S at startup until you get a command prompt. Then:

fsck

mount -uw /

cd /Users/<short user name>/Library/Preferences

rm com.apple.finder.plist

reboot
