I'm a little nervous here. My old iMac finally died and I bought a new eMac. The shop saved all my data in a file called Data Transfer and it is on my Desktop. I imported my pics by Import/iPhoto Library. They all seem to have come over but there are over twice as many as I thought I had. I don't want to proceed until I am sure I won't lose any special ones. I do have most backed up on an external drive, but I want to know how to retrieve them from the previous H/D. Also, none of the albums came over. How would I proceed to have the pictures organized again. While I'm asking; how about Address Book, iCal, iTunes etc.

So the "shop" just backed up your Home folder correct? What's actually in this "Data Transfer" folder...

iTunes has a file called "iTunes 4 Music Library" and another called "iTunes Music Library.xml" these contain all of your saved info like play count, ratings, etc. iPhoto has some similar files like "AlbumData.xml" which I'm sure do the same thing. Try locating those files and putting them in your pictures and music folders. Be careful though and replace the default files only if you are copying all of your music and pictures exactly as they were on the old drive. Again be careful since I'm not sure what you already did and I don't want you to rewrite any useful data, this is not exactly the best situation to experiment with.
