How many people here are hosting up to 5 different .com/.net/.org addresses on one xServe? I might be needing to do this in the future. How hard is it and what needs to be done? Thanks!

I've got a number of client.server.com format virtualhosts set up on my xserve, and those are quite easy- a whole lot easier than editing httpd.conf on a linux box.
Just gotta open up the Server Status app, and configure Internet/Web. It's cake.
Now I'm assuming you mean web hosting. I have no experience with mail for multiple domains on one Xserve, but I'm sure it could be done.

I know the virtual host part would be a piece of cake. Isn't running multiple .com's on 1 ip the same as virtually mapping them? How this is done, I guess I would need to research... Thanks!

Virtual hosting in apache is very simple.
I can't speak to OSX's setup for it, but I run maybe 20 websites using apache on linux, and apache is apache, regardless of the OS.

So... using my great powers of inference to deduce that you can in fact run multiple .coms using 1 ip address. Excellent........... Thanks!

Yes, you definitely can, and the Xserve makes it nice and simple.

New question: Will an Xserver cluster node work well to host web sites or do you need an OS X Server comp to control it?

The cluster nodes are just deprived of the possibility to add more HDs. If you can live with a single drive, then you can use it.

A single 80GB drive would work just fine.... I think.

Yes, I think so, too. So I can't think of a reason why the cluster node shouldn't be a good solution for you ...

Excellent. I will keep this in mind. Seeing as how it will be at least 1-2 years away, I hope I can still remember this!!!
