postfix, dyndns, problematic FROM line

a) I have my machine set up with a dyndns.org acct and have set my HOSTNAME in /etc/hostconfig as such (remind me why setting hostname is important?)

b) using elm in Terminal for mail

c) have an elmheader that should be setting my From line to my Roadrunner addr, but seems not to

d) have /etc/postfix/main.cf set myorigin to the RR domain
myorigin = nc.rr.com

yet my outgoing mail is still showing up to some people as user@mydomain.dyndns.org (I want user@nc.rr.com)

1) how can I fix this?

2) how can I set up to receive anything returned to me@mydomain.dyndns.org (just open up port 25???... want to be sure I'm not becoming an unwitting relay).

3) any idea where that mail is going in the meantime? Its not getting bounced back...

i can only answer #2: make sure that your mx record for your domain is set to your computer's fully qualified domain name... dyndns records don't do this by default, you must check the "mail exchange" checkbox.

(of course you must also have postfix set up, port 25 open, etc.)
