What do I use to keep my Apple software and Jaguar up to date, Software Update or Apple Update, and where can I find these.

Go to the Apple in the top left corner -> Software Update

And there you will see what you haven't got up to date.

edited to add: I'm not sure it is that way in Jaguar. If that isn't there go to System Preferences -> Software Update and there it is.

Go to the Apple Store and buy a copy of Panther. That is how you keep your system up to date.
