I would imagine there is a .plist file that determines the items in the menu, as there is for customising the Dock menu. Unfortunately I don't know where it would be (maybe in the Finder's package contents, or in CoreServices somewhere?).

Sorry fisher, I can't help. But I would like to see the ability to remove the "Help" menus everywhere, I know where help.app is

You can edit the menubar's nib file, but that can cause problems last time i tried it....never did see how it's done for contextual menus in the finder....

I don't know much about developer stuff, but look for a NIB file, maybe?

If you do not see it in the nib then they probably build the menus programatically and I believe you are out of luck.

They're contextual -- so they HAVE to be built dynamically based on what they're referring to.
