Switching Between CUPS and OEM Driver

I just upgraded to my beloved DP 2GHz, and the one issue I'm having is printer driver configuration. Specifically, I have an old Epson 900 that the G5 is currently using its CUPS driver with. However, I wanted to access the OEM driver, so I downloaded it from Epson (it certainly seems quite old, but whatever). I installed the package and restarted, but my Mac continued to use the CUPS driver instead. Now some may assume that the Epson driver is incompatible with 10.3.4, but it is not. My iBook, which uses the same printer and is running 10.3.4, is using the OEM driver rather than CUPS. So, I'm wondering how to switch between the CUPs driver and the OEM driver - it certainly seems possible. Where are the drivers stored, specifically? I don't think the true driver is in Library/Printers/Epson, but I do have an Epson branded plugin for my printer there.

Did you go back into Printer Setup Utility and set up a new printer with the Epson drivers? They won't just magically replace the CUPS-setup printer.

Yeah I did try that, tooki, but even though it said it found new printer drivers the only one I could find was the CUPS driver. Thank you for the suggestion, though.

On the off-chance you didn't notice this detail:

When trying to set up using the Epson driver, did you select "Epson USB" as the interface type? Epson's drivers do not work when the generic "USB" is selected as the interface.

Epson's drivers are really unnecessarily complicated to set up. I don't understand why they don't just use the OS-provided services, it would make things a lot easier.
