Isn't there supposed to be something in OS X that enables something
close to post script printing of text, regardless of printer? You know,
font smoothing, or... which translates to the printer? Without having to
purchase an overly expensive RIP...

OS X's printing has always supported the translation of PostScript, so it always prints text nicely, provided you have the necessary font files.

If you're talking about PostScript printer sharing, well, that's always on, if you turn on Printer Sharing. Connect via LPR to the machine sharing the printer and off you go.

Essentially, the postscript RIP is built in to OS X. It just works.

I opened an .eps file today and Preview converted it to PDF
