I have a load of West Wing DVD's and I'd like to listen to the audio on my iPod. What's the best way of taking just the audio from the DVD? I could use audio Hijack but I'd rather not do it in realtime.

Well, I was going to suggest Audio Hijack, but you've already thought of that. Not sure if there's a way to do it other than realtime. (Won't people sound like the Munchkins or the Chipmunks?)

good article, but you can save a little time and skip a few steps by going straight from DVD to AC3 by using 0SEx.

Another vote for 0sex (that's a zero, not an "o"). Then use mAC3dec to convert to whatever format you want.

Thanks very very much guys. BUT...I have a problem I try to get the audio off with 0SEX but when I use MaC3dek I get strange drop outs and high pitched elements in the audio. What am I doing wrong?

I'm using 0SEX to just take the audio and then using MaC3dek to convert the VOB into AIFF but I think I'm doing something wrong...

DVDxDV can do this and has a very simple and clear interface.
Its mainly for extracting the video to DV, but in the "Extract" menu you can extract the sound alone.

In 10.3, I was using a combination of DVDBackup, bbDemux, and mac3dec without a problem; however, I was re-extracting some tracks to convert into AAC in 10.4.1, but I'm having some glitches appear in the music towards the end of the last few VOB files.

The VOBs play fine in DVD player so I don't think it's a problem with the data itself but rather either in the AC3 extraction or the AC3=>AIFF conversion process.
