I'm not sure of a way to "hack" the system in order to do this; however, Kunvert 1.5.1, makes it easy to convert to .JPG (among other features) by a simple drag-and-drop...

SnapNDrag allows one to take screen shots or "selection" in either JPEG, PNG, or TIFF and even has a timer for taking shots of drop down menus, alerts, etc.
And it's free. http://www.yellowmug.com/snapndrag/

Or...
Cmd-Shift-3-Ctrl and it goes to the clipboard, open preview, hit paste, then save as a jpg, voila.
Suck on that 3rd party apps.

still, a little involved isnt it? kunvert is a great freebie app for this...
(you drag a screenshot onto the icon, it converts to a jpg, and if you want, deletes the original and closes itself.)
nice!

i keep kunvert in the corner of the desktop; take a screenshot, drag it onto the icon...done.
it's free, it's one step instead of three...but whatever works...

DropJPEG
is simple, free, and works like a charm. Very few features but does exactly what you want. Make sure to set the preferences before running so you know what to expect.
It only converts to jpeg format.
It can be set to auto-quit when complete .. so just leave it in your dock, drag a screenshot (or numerous other file types) over it and it will convert without any interface popping up and then close itself.
Only caveat is that it tends to put the converted file at some random spot on your desktop rather than in order after the last icon.
Best option for what you want, IMHO.

Not directly. This was an unsupported feature in earlier versions of OS X, but it is no longer in 10.3.

This has been a very helpful thread.
In addition to the fine free/shareware mentioned above, the discussion of one of them at VersionTracker also mentioned FreePhotoConverter -- which is very convenient as converting pdfs, etc. to standard sizes of jpegs etc. (640x480 or 800x600, ... ) for email or web sites.

There was a way at least in 10.2 to change the format in which the screen shots were taken. You had to modify a plist or something like that. Not sure if it works in 10.3, and I can't remember where I had found the hint.

It doesn't; hence, all these other suggestions/software solutions...
