What exactly is it you want to do? "unix" covers an awful lot of ground, including dozens of operating systems, a whole philosophy of programming (or two if you include linux), and is sometimes incorrectly used to group all of the programs that run in posix environments (apache, perl, etc).

This might be what you are looking for, but I have never looked through it, so can't give it a more specific recommendation than it is an O'Reilly book (usually a good thing, but I am more a fan of the upper level books... I want good reference, not walk-throughs).

There are a series of Unix how-tos at OSXFAQ. Also, use a search engine to look for Unix tutorials.

www.google.com is your best bet.
Just type in what you're looking for.
Odds are you'll get your question answered if you poke around a bit on the results page.

Check out W. G. Scott's OS X Unix Links page for resources.

Another useful resource is the O'Reilly® Network Safari Bookshelf - Macintosh site, which has some free book chapter sections that can be read on-line, with the option to read entire books on-line for a nominal fee.

Still another good site is the O'Reilly® MacDevCenter.com: Terminal App and Unix site. This site has links to many useful free articles on Mac OS X UNIX.
