Make a style with an img tag that has a size of 0x0. Then use that style sheet in Safari Prefs.

You could use pithhelmet and tweak the rules to block images. Should be able to work for most items, I would think.

Or just use RSS till Safari 2.0 comes out with it.

While you weren't too specific about what kind of images, I assumed you meant ads. I modified my host file to block ad servers with the information found here :

While this thread was locked for good reason, I'm choosing to post because the answer is quite simple. In the Safari Prefs, in "Appearances," just uncheck the box that says "Display images when the page opens." This does indeed keep all images from loading as well. I find this particularly useful when I am trying to dial up from my phone (a 9200 bps connection) and I just want the latest news.
