All icons of devices stores in the /System/Library/SyncServices/

There is:
ABConduit.bundle
BTConduit.bundle
MotorolaConduit.bundle
SymbianConduit.bundle
and etc.
So, there is icons for devices.

You have to run under root to be able to change in this files. All this files are packages, depends of what icon you want to change, all icons stores in tiff file.
Show Package Contents (ctrl+right mouse button) folder inside package Contents-->Resources

So, make a tiff file of new icon and replace it with the one you wish to.
It's all really simple.

P.S. Make backup before you change anything.

Open the SyncServices as macdaemon says. From now on you'll get a lot of authentication boxes asking for your password. Right or control click on the set you want to change, and pick 'Show Package Contents' from the menu, this will open the bundle as a folder full of files and images, copy the image you want to change to wherever you want to keep it, and rename it to put original in the filename (eg. so its NewiPod(original.tiff instead of NewiPod.tiff). Make your new icon to 60x60 pixels with a transparency, so you're working on a layer with no background. Save the file as the proper filename as it is in the bundle folder (with .tiff with 2 f's as the extension, .tif won't work) and copy it into your bundle folder.

This does work, I've done it myself with my icons to make the iPod a 4g and replace the N-Gage with my N-Gage QD, as the QD isn't in the Symbian bundle.
