Whenever I copy files from a read-only source (such as a CD), the resulting file on my hard drive is read-only. Is there a way to turn this off so I don't have to activate read/write access?

Sounds like you're copying from an ISO-9660 formatted CD, which automatically locks files when they are burned. There's nothing you can do about that part, it's in the way that file system works.
