Along with the usual Applications folder, my folder, library, etc. there are a number of folders with (OS 9) at the end, with titles such as cores (OS 9), dev (OS 9), etc. I don't want OS 9, are they safe to remove?

I'm guessing you've installed OS X more than once? It sounds like there was a previous installation that it moved aside thinking it was an OS 9 install. (This happened at my work, too, where a bunch of computers had 10.0 on them originally, but later we installed Panther.)

It's safe to remove OS 9. That means the OS 9 system folder, applications folder and documents folder (if you don't want to keep anything in there).
I have never seen a core (OS 9) or dev (OS 9) folder on any machine. I assume you bought your Mac used. In that case I suggest you format your disk and make a completely fresh install of Mac OS X. You never know how the previous owner messed with the system, so it's safer that way.

It's brand new (a week). I didn't even enter the os 9 disk.

It seems that Chuckit's theory is right. Then it's safe to trash all of those folders.
