You will want to login as a different user to do this--you don't want to change the UID on a user that is currently logged in.
You change the UID using Netinfo. Then, you have to go back and chown the user's home directory. Any files outside of the user's home directory that used to belong to the user won't anymore. You'll have to chown on each of them individually.

Beware that you don't only need to change the uid, but als the gid to match.
under OSX each user has it's own group btw, so it shouldn't be that hard.

Are you sure you need to change the gid? Obviously you do if you have files which aren't owned by your user but are owned by your group, and you still want to access them from both machines. However, there are times when you might not want to do this.
All of this said, you might also want to consider Kerberizing your network if you're going to be getting too into NFS. I've considered something like this, actually, and I know that Panther comes with some Kerberos stuff, but where can I find some good docs on how to set it up?

I'm not sure, but it might be enough if you are in an additional group that has the same gid as the gid on the server.

This is done in OS X server. I believe all of the servers that Apple uses for this are open source, but I'm not aware of anyone setting this up under OS X client.
I do have it working, BTW. As long as the daemons don't die, I can log into any machine connected to my network.
