I'm using Panther on a G4 iBook.

I see how I can highlight some text and drag it onto the desktop. I end up with a small "clip" sitting on my desktop for later use. How can I access this text again? I can d-click and see it. But I wasn't able to copy it. Can it only be dragged back into some other app? What's the most efficient way to use this functionality?

I started playing with this last night, looks like it might be useful.

Yes, in order to use the clipping, it has to be dragged into the window of an accepting application.

Actually, while you're in the window that you get my double-clicking on the clipping, you can choose copy and it will copy the clipping text to the clipboard.

Ah, did not know that. Apple could make it more obvious by providing a simple toolbar with a copy button, however; I never thought to try copying without being able to highlight any of the text.

For viewers like that window and Preview, you can generally just choose copy and it will work. (Of course, I'm not making any guarantee for third-party folks, but that seems to be the rule.)
