I want to globally change .txt files (and some other random files) to open by default with the emacs I put on my mac. Where can I change this globally for all files of a certain type?

Select the file, type Apple-I (Get Info), select "Open with:", choose EMACS from the drop-down list; if it doesn't appear, choose Other... and select it manually. Then click "Change All..."
