Does it make it look like all one partition or does it show them as seperate volumes?

On my Mini, on the desktop, I have icons Macintosh HD and Lacie (the Lacie being a USB), but if I had two internal drives (obviosuly not on a Mini though) would it show two different internal HD icons?

yes, a desktop icon will appear for each HDD installed. In fact, if you partition your mini's hd, it will show a seperate icon for each volume too
