Losing Sound on Non-apple Apps (Sample Rate)

Hey all,

I just wanted to ask if anyone knows why OSX keeps losing sound on non-apple applications like Entourage?

I have been having this trouble for a while now, and I know how to fix it. I have to open the Audio MIDI Setup program in the Utilities folder, and then switch the sample rate from 96000 HZ to 44100 HZ. This always fixes the problem, but it keeps getting switched back.

I suspect that iTunes is what is changing this setting, but I can't be sure.

Does anyone know what causes this behavior?

EDIT: I am on a current generation powerbook (17"). The first time it happened, it was after I had plugged in (and then removed) a pair of headphones.
