This is a very odd situation. But recently none of my disk images have been mounting - they've all been opened with Disk Utility and I have to choose to mount them from there. I have tried running "Get Info" on the disk images and setting their "Open With" program to the DiskImageMounter in Core Services, and it will work. However it will no longer have the disk image icon nor will it allow me to change all documents to use DiskImageMounter. This also means that no disk images downloaded with Safari auto-open anymore.

I have tried setting up another login to see if it experiences the same woes and it does not, so obviously it's a problem only with my current user. I'd like to not have to change to a different user, so does anyone know what could be wrong?

I'd probably start looking at preference files. There could be a corrupted one.

Sounds like a corrupted LaunchServices database. Go to /Library/Caches and trash any files beginning with com.apple.launchservices and ending with .csstore. Then reboot and see if your problem persists.
