I hope this hasn't been mentioned already - Apple has posted a KB article detailing how to prevent Mac OS X 10.4 Tiger from creating .DS_Store files on network volumes.

Precluding .DS_Store files from being created is now an option setting in the new TinkerTool 3.6 http://www.bresink.de/osx/TinkerTool.html
