Doesn't OS X give us multiple options at reformatting our HD (i.e. writing over data multiple times)? If so, is there any reason why someone would need an additional disk utility such as Super Scrubber to sanitize a disk?

Yes, and Tiger offers something like a 32-pass scrub or something ridiculous like that.

No, there's no reason anyone using OSX needs something like superscrubber.

Why are they trying to sell separate versions for G3s G4s and G5s? Sounds like a big rip off to me.

Pretty much; they're counting on people not knowing about the options which come with a Mac, or the security flaws inherent in this method of dealing with disks.

Even the Department of Defense's software security guidelines only work up through computers which contained classified information. For Secret or Top secret stuff, there simply is no software or hardware securely enough. These guidelines call for physically melting the drive down with thermite, smashing the resulting lump of metal into pieces, sealing it in concrete, and burying it. You may not need to be quite that thorough, of course. But if you want to get your data erased to the point where even an intelligence agency is going to have trouble getting it back, you don't need software; you need a sledgehammer.
You are in Soviet Russia. It is dark. Grue is likely to be eaten by YOU!

Do I need to be that thorough? No. Does that sound like a lot of fun? Yes. . .
The era of anthropomorphizing hardware is over.
