Well, here's the thread I started on unixODBC a while back. The last post has a bit of info.
To setup a DSN, use ODBCConfig - it's very much like Microsoft's ODBC admin thingy. It's a GUI app you'll probably need to run under X11 (haven't checked if anyone's done a native OS X version for it) so there may be a bunch of dependencies you'll need to install etc, but it's nice and simple to use.
