If I choose to dual-boot my future Mac, how should I go about protecting the Mac partition?
In theory, Windows malware has full access to the whole Mac OS X partition and could write anywhere in there, right?
Any suggestions?

Windows can't natively read/write HFS+ partitions, so unless you install additional software in Windows it can't get to the data.
Really Bad(tm) software could just start screwing with your partition tables and boot records (not caring what the partition type is), but I can't think of any way to protect yourself from that (aside from acting intelligently when using Windows).

If you are even ABLE to dual-boot in the future...then that would be a good time to start worrying.

Anything is possible. Since the core of OS X is open source, it wouldn't be particularly difficult to see what it takes to boot a new Mac and then squeeze in a BIOS emulator.
