Hi All - Im a proud new convert with my 17" intel imac and need assistance in finding the command to display (and properly resize) all open applications on the screen.

Are you talking about Exposé? Pressing F9 (at least on my PowerBook) displays all the windows for open applications.

You can change the button activation in the system preferences in the Apple Menu.
